French drip coffee
& French drip coffee pots.

The French drip coffee pot is south Louisiana's traditional coffee pot. It is usually, but not always, a 5 part pot; the bottom receptacle, top cylinder which holds the coffee grounds, 2 'filters' which control the flow of water, and a lid.
I can't imagine using any coffee but a Louisiana coffee in this pot. Either dark coffee or coffee and chicory. Boiling water is poured slowly over the grounds, old timers would use a spoon, until the pot is full. This produces a very strong, smooth oily brew.

French drip coffee is wonderful served as cafe au lait. There are many recipes which tell how to combine coffee (or coffee with chicory) and milk (or rich cream). Here is a typical recipe:
1 c Milk
Sugar
1 c Louisiana coffee w/chicory
Put milk in saucepan; bring almost to a boil.
Pour hot freshly brewed coffee and milk simutaneously into cups; sweeten with sugar to taste.
The ratio of coffee to milk may be varied to suit your taste.
